If this question had been asked five or six years ago I might have a longer answer. But over the years I’ve moved away from following hashtags on Twitter specifically, and now use lists some times, and then mostly an RSS feed to keep up with conversations. That being said, in the year 2021 if you work in edtech and want just one hashtag to follow, you should make it:
